baked gluten free sweet potato fries

These sweet potato fries are a kid-approved substitute for regular fries, if my fussy eater loves them it must be something good about them. He loves fries so much and potato waffles that I decided to try to make these for him to give it a try as there are not many new things that he is willing to try. Sweet potatoes are considered more nutrient rich than regular potatoes with more vitamin c, fewer calories, more fibre and few net carbs than a white potato, despite having more sugar so if he likes these I’m all up for it!

I like to offer him these fries even as snacks between meal or you can pair them with vegetables or meat.

Ingredients:

  • 2-3 Large sweet potatoes, sliced into thin strips
  • 4 Tbls coconut oil (or olive oil)
  • 4 Tbls cornstarch
  • Spices (cumin, paprika)
  • Salt and pepper

Method:

  • Preheat oven to 425.
  • Peel and slice sweet potatoes into thin strips.
  • Put fries in a large bowl and add the cornstarch.
  • Place the fries in a sieve and remove the excess cornstarch.
  • Add the oil and seasoning and mix well.
  • Put fries onto parchment lined baking sheet. Spread so they aren’t touching one another. This will help them crisp up
  • Bake for 25-30 minutes or more until slightly browned and tender.
  • Enjoy!
